Toasted cinnamon pound cake with triple berry sauce
(Fat free pound cake is one of those delightful convenience items that let you have your cake and eat it too)
Sauce
1 cup raspberries
1/2 cup blueberries
1/2 cup blackberries
2 tablespoons sugar
2 tablespoons frozen unsweetened apple juice concentrate
1 teaspoon grated lemon peel
Cake
1 tablespoon butter or margarine, softened
4 (1-inch) slices fat free pound cake
2 teaspoons sugar
1/8 teaspoon cinnamon
In medium saucepan, compine all sauce ingredients, mix well. Bring to a boil over high heat, stirring occasionally .remove from heat; set aside
Spread on one 1 side of each slice of pound cake. In small bowl, combine 2 teaspoons sugar and cinnamon; mix well. Sprinkle sugar mixture over butter. Heat large nonstick skillet over medium-high heat. Add pound cake slices, sugar side down .cook 3 to 5 minutes or until lightly browned.
To serve, place pound cake slices, toasted side up, in individual dessert dishes. Spoon sauce over pound cake.4 servings.
Tips: Thawed frozen berries can be substituted for fresh berries
