750g (11/2lb) ripe but firm tomatoes, thinly sliced 1 mild onion, cut into thin rings 1tbsp snipped fresh chives.

90ml (3fIoz) extra virgin olive oil 2tbsp red wine vinegar 1tsp caster sugar salt and black pepper.

1- Overlap the tomato slices in circles of diminishing size in a large shallow dish. Arrange the onion rings on top.
2- Make the dressing: combine the olive oil, red wine vinegar, and caster sugar, and add salt and pepper to taste.
3- Spoon the dressing over the tomatoes and onions, cover, and leave to chill for about 2 hours. Sprinkle with the snipped chives before serving.
