Summer berry sundae


1 tablespoon caster sugar

125 g frozen mixed berries

1 teaspoon finely grated orange rind

250 ml (1 cup) vanilla ice-cream

2 tablespoons toasted macadamias, chopped coarsely



1-     stir sugar and berries in small saucepan over heat, without boiling, until sugar dissolves, bring to a boil then reduce heat,simmer,uncovered about 2 minutes or until berries soften stir in rind cool 10 minutes

2-     layer ice-cream, berry mixture and nuts into serving glass
