175 g spaghetti
40 g tablespones butter
40 g table spoons plain flour
300 ml / 1 1/4 cups milk
175 gm / 1 1/2 cups cheddar cheese , grated
2 tea spoons grated onion
4 large eggs , hard- boiled
2-3 table spoons dried breadcrumbs
2 large tomatoes
bring a large pan of salted water to the boil. Break the spaghetti into convenient lengths for serving , add to the water and cook for about 8 minutes . when cooked , drain , reserving 150 ml / 3/4 cup of the liquor
melt the butter in the pan , add the flour and cook for one minute . gradually stir in the milk and reserved cooking in liquor . bring to the boil , stirring , and simmer for 2 minutes . add most of the cheese , the onion and salt and pepper to taste
preheat a moderately hot grill. place half the spaghetti in a shallow flameproof casserole .Halve the eggs and arrange on the spaghetti . cover with half the cheese sauce , top with the remaining spaghetti and cover this with the remainder of the cheese sauce . mix the rest of the cheese and the bread crumbs together and sprinkle over the top . slice the tomatoes and arrange around the edge of the dish . grill for 10 minutes.
