Caramelised apple tarts
1 sheet ready-rolled puff pastry
1 egg yolk
1 tablespoon milk
1 table spoon caster sugar
2 large apples (400g)
60g butter, softened
1/3 cup (75) firmly packed brown sugar
1/2 teaspoon ground cinnamon
1- Preheat oven to hot (220 C/ 200 C fan-forced).lightly grease oven tray
2- Score pastry in crosshatch pattern with sharp knife. Brush pastry with combined yolk and milk, sprinkle with caster sugar. Cut into four squares, place on prepared tray.
3- Cut unpeeled apples crossways in 5mm slices. Place sliced apple, overlapping if necessary, over base of large baking dish, dot with butter, sprinkle with brown sugar and cinnamon. Bake pastry and apple apple slices, uncovered, about 10 minutes or until pastry is puffed and browmed.remove pastry from oven. Turn apple slices, bake, uncovered, about 10 minutes or until soft and browned.
4- Top pastry with apple; drizzle with caramel mixture in baking dish. Serve with frozen vanilla yogurt or ice cream, if desired.
