Apple pancakes

recipe for making 8 pancakes

1 egg and 1 extra yolk

300 ml milk

100 g plain flour

150 ml double cream

oil for frying

cream to serve (optional)

 

filling :

750 g eating apples,peeled,cored and chopped

25 g sultanas

25 g butter

1/2 teaspoon ground cinnamon

50 g demerara sugar

1- Beat together the egg,egg yolk and milk.put the flour in a mixing bowl and whisk in the egg mixture.set aside

2-place the apples,sultanas, butter,cinnamon and 25 g of the sugar in a large bowl.cook,covered for 7 minutes,stirring halfway through cooking.set aside covered

3- using a small frying pan on a conventional hob make 8 thin pancakes.fold each ban cake in half and half again to form a fan shape

4- fill a pocket of each pancakes with a spoonful of the apple mixture and arrange the filled pancakes in a shallow flameproof dish.pour over the cream and sprinkle with the remaining sugar.place under a preheated grill and cook until the sugar has melted and the topping is brown and bubbling.serve with cream,if wished.

the pancakes and the apple mixture can be frozen separately (interleave the unfolded pancakes with greaseproof paper before freezing).

put the pancakes in microwave ,uncovered ,on full(100%) for 4 minutes. rearrange ,and remove any which may be ready , during the process.

the apples : microwave ,uncovered .on defrost (30%) for 12 minutes ,increase to full (100%) and cook for 4 minutes or until hot
