Tomato and cucumber soup

1 small onion, sliced

1 large cucumber,coarsely chopped

150 ml / 2/3 cup chicken stock

1 can peeled tomatoes salt

1/2 teaspoon paprika

pinch sugar

 

TO SERVE:

150 ml/2/3 cup of natural yogurt

3 tablespoons creamy milk

chopped chives to garnish

place the onion,cucumber and stock in a saucepan.cover and simmer gently until the onion is soft. sieve or liquidise with the tomatoes,salt,parprika and a pinch sugar.chill well before serving.

TO SERVE AT ONCE: stir in the yogurt and single cream. garnish each bowl with chopped chives.

TO FREEZE: do not add the yogurt or cream .pour the tomato mixture into a grid polythene container or foil bag.allow to cool.seal,label and freeze.

TO THAW:place in the refrigerator overnight as the soup should be served chilled.finish as above
