Sweet saffron lassi

Lassis are yogurt-based drinks which are excellent cooling foil for a fiery Indian curry

 

Pinch saffron threads

 

1 tablespoon boiling water

 

2 cups (560 g) plain yogurt

 

1 cup (250 ml) plain yogurt

 

2 tablespoons caster sugar

 

1/2 teaspoon ground cardamom

 

Ice cubes

 

Combine saffron and the boiling water in small heatproof cup; stand 5 minutes

Whisk yogurt, the iced water, sugar and cardamom in large jug; stir in saffron mixture.

Serve lassi over ice cubes

makes 3 cups (750 ml)
