Salad nicoise

 

Lettuce leaves

 

1 (198 g) can tuna, drained and flaked

 

1 green pepper, deseeded and sliced

 

1 tablespoon finely chopped onion

 

3 large tomatoes, each cut into six

 

175 gm French beans, cooked

 

1 tablespoon capers

 

6 tablespoons French dressing

 

 

Garnish:

 

3 hard-boiled eggs

 

1/2 can anchovy fillets, drained black olives

 

Arrange the lettuce leaves on 6 small plates or dishes. Lightly together the tuna, green pepper, onion, tomatoes, beans, capers, and dressing. Spoon over the lettuce leaves. Garnish with quarters of hard-boiled egg, anchovy fillets and black olives. Serve French bread or your preferred bread
