Creamy mushroom pasta

Cheese and mushroom noodles

40 gm butter or margarine

1 medium onion, chopped

100 gm mushrooms, washed and halved

100 gm packet cheese slices

175 gm ribbon noodles

Salt and pepper

1 teaspoon lemon juice

Chopped parsley to garnish

 

Melt the butter or margarine in a frying pan, add the onion and cook gently for about 10 minutes until soft. Add the mushrooms and cook for a further 2 minutes. cut the cheese into matchstick lengths.

Meanwhile, cook the noodles in boiling salted water for about 8 minutes until just tender. Drain well and return the noodles to the pan. Stir in the cooked onion and mushroom mixture, the cheese, seasoning and lemon juice. Blend thoroughly and serve immediately, garnished with parsley.
