Cauliflower amandine

i medium cauliflower

salt and freshly ground pepper

75 gm butter

100 gm almonds,blanched and shredded chopped parsley to garnish

break the cauliflower into florets then trim , wash and cook in boiling salted water for 10-15 minutes until just cooked but still crisp.drain.melt the butter and saute the almonds until golden brown.toss gently with the cauliflower and season to taste.turn into a serving dish and sprinkle with parsley
